Recap - 26 days of Cooking Carnival

If you are a reader or a follower of my blog, you might have noticed that am running a month of blogging for the whole month of september. We marathoners run a month of blogging twice a year and it happens during the month of April and September. This whole month blogging have specific theme and this time's theme was Cooking Carnival for 26 days with sundays off. Srivalli suggested to Pick an ingredient or a theme for a month or else an ingredient or theme for a week. Obviously i went with an ingredient for every week and i picked Dry Beans/Legumes as my star ingredient. I showcased a dry bean a week with different dishes out of them.

Initially i was very much interested to pick a theme for a month but later, my busy personnal life pulled me not to go with a theme. A month of blogging needs some pre planning, obviously i started preparing dishes very much earlier this time as i am working full time now. Yes my personnal life is getting very much busy hence my bloggy world took a back seat now. However blogging marathon helps me a lot to keep myself and my blog baby bit active, have to say a big thanks to Srivalli, the brain child of blogging marathon. Coming to this long blogging marathon, i showcased dry green peas, black-eyed peas, black beans, chickpeas and red kidney beans. Rajma Masala Sundal/Red Kidney Beans Masala Sundal

Sundal is a kind of South Indian evening snacks made with Dry beans aka Legumes (not to mistake with the French word, in French 'legumes' means 'vegetables'). Sundal are made especially during Navarathiri festival, which calls for 9 days of celebrations. However we doesnt need any reason to dish out this protein rich snacks to feed our loved ones with less efforts. Actually sundal is prepared easily with cooked beans like chickpeas, black-eyed beans etc which is simply tempered with usual tempering spices and flavored with curry leaves. Though some sundal preparation calls for some exclusive spice powder in case if you want to prepare the sundal with a twist. My today's post in one among those sundal with a twist, since rajma aka red kidney beans doesnt tastes like other legumes, its better to toss it with a spice powder to make the sundal preparation more interesting.

Soya Rajam Kheema aka Minced soya with Red kidney beans, trust me this curry makes an excellent side dish to relish with some rotis or else wrap it or simply use as stuff for making parathas. So many option to enjoy this nutritious, vegan keema. Usually i love to make kheema with soya nuggest as they are very much nutritious to enjoy without any guilt. Adding rajma to a usual soya keema makes this already delicious dish more healthy and nutritious at the same time. With all spice powders went in it, this vegan kheema makes an excellent accompaniment to relish even with some toasted bread slices.

Arroz Congri/Vegan Cuban Red Kidney Beans Rice

Arroz Congri/Congris is typically a Cuban black beans rice, though many different variations do exists and one among is this red beans and rice version. Congri is prepared mostly with meat especially pork, but i opted for vegetarian version actually a vegan one. However i followed this recipe, this red beans and rice is from eastern part of Cuba, though many people consider this dish as a signature dish of Oriente province. Traditionally this rice dish is cooked with fat from pork meat and ham is added to the rice to make this dish as a complete meal. However this vegan version tastes simply fabulous and quite nutritious to enjoy as a main course with some grilled vegetables or pan fried potatoes. Since this dish calls for long grain rice, you can also serve this red beans rice a salad.
